Food for Your Body & Mind: Amorous Amaranth

Can a breakfast bowl be an aphrodisiac? This one can 😉❤️ 

Although you’ll probably hear amaranth referred to as a grain, it’s not a cereal grain like oats, wheat or rice.  It is a seed like quinoa, but because it’s prepared like other grains, it’s often called a “psuedo grain”. Also, like quinoa, it’s consumption dates back to the ancient Inca, Aztec and Mayan civilizations where it was revered for its health benefits. It’s gluten free and bursting with densely packed vitamins, minerals, protein and other phytonutrients. Studies of amaranth have shown the following benefits…

  • amaranth is loaded with antioxidants that can help reduce chronic inflammation and can help relieve symptoms related to fibromyalgia and other autoimmune disorders
  • amaranth contains high levels of manganese which can help regulate blood sugar
  • amaranth is rich in calcium and iron which can help support bone health
  • eating moderate amounts of amaranth daily has been shown to lower cholesterol and blood pressure
  • amaranth is high in both soluble and insoluble fiber which can help aid digestion     

Anything packing that much nutrition is just sexy! And when you add some fresh mangos, kiwis and cacao nibs on top… well… if you’re eating this for breakfast with your partner you might be late for work 😍

Amorous Amaranth

4 Servings

Ingredients


1 cup amaranth

3 cups water

1/4 tsp salt

1/4 tsp cinnnamon

Nondairy milk – enough for creamy consistency

Maple syrup, honey or brown sugar – enough for desired sweetness

 

Optional – Try topping with any of the following, or experiment with your own creations

1 Tbsp cacao nibs

Fresh mango & kiwi

Fresh berries

dried cranberries, raisins, currants, goji berries…

fresh figs

 

Directions


Add the amaranth, water, salt & cinnamon to a pot. Bring to a boil, reduce heat to low, and simmer covered until all liquid is absorbed ~ 20 minutes. 

Stir in non dairy milk for desired creaminess

Drizzle or sprinkle maple syrup, honey or brown sugar for desired sweetness.

Make extra amorous with desired toppings
